I like all kinds of soup. Sometimes the thin, clear ones, like garlic soup, and sometimes really thick, almost thick enough to spread over bread instead of eating with a spoon ones, like pea soup or bean soup. I had chilled lettuce and bacon soup this weekend, and that was also very nice. Sometimes I make chilled beetroot soup with sour cream.

I like chicken noodle with veggies. Or the chunky lineof soups since they tend to fill me up better. And I always seem to have bread and butter when I'm having a soup or stew.

i like simple Chicken Noodle Soup 1 broiler-fryer chicken -- cut up 6 Cups water 1 Cup finely chopped onion 3/4 Cup finely chopped celery 2Teaspoons salt 2Teaspoons fresh chopped parsley 1/2Teaspoon pepper 2Cups uncooked egg noodles In large saucepan or Dutch oven, place chicken. Add water, onion, celery, salt, parsley and pepper. Cover and simmer over low temperature about 1 hour or until fork can be inserted in chicken with ease. Remove chicken from broth. When cool enough to handle, remove chicken from bones, discarding skin and bones; cut chicken into bite-size pieces. Break noodles into small pieces and cook according to package directions; drain. Skim fat from broth and discard. Bring broth to a boil; add chicken and cooked noodles to broth and simmer about 5 minutes. Garnish with slices of hard-boiled egg.

French Tomatoe Soup INGREDIENTS 1 tablespoon butter 1 large onion, chopped 6 tomatoes, peeled and quartered 1 large potato, peeled and quartered 6 cups water 1 bay leaf 1 clove garlic, pressed 1 teaspoon salt 1/2 cup long-grain rice DIRECTIONS Melt butter in a large saucepan over medium heat. Saute onions in butter until tender and lightly browned, about 10 minutes. Add tomatoes, and continue cooking for 10 more minutes, stirring frequently. Add the potato and 2 cups of water. Season with the bay leaf, garlic and salt. Bring to a boil, then reduce heat and simmer, covered, for about 20 minutes. Stir in the remaining water, and bring to a boil again. Discard bay leaf, and strain the solids from the broth, reserving both. Puree the vegetables in a food processor or blender, and stir them back into the broth. Bring to a boil, and add the rice. Cover and simmer over low heat for about 15 minutes, or until rice is tender. Serve hot.

I was bought up on my Russian mother's home-made borscht and her vegetable soup. Sadly she is not around to make it anymore and no one can make it quite the same. I also have a weakness for good old Heinz Cream of Tomato soup (not sure if it's available outside the UK) with black pepper and some extra grated cheese.

I love most soups- maybe not fishy ones though a friend once made a bouillabase (sp?) that was to die for and I am NOT a fish or seafood lover. I make an Italian Meatball Soup that is wonderful - a great lunch dish for guests in winter, or for a family dinner. YUM.

I like quite a few different types of soups and stews. My favorite is my own homemade chicken and rice although it runs a close second to my homemade beef stew. Tomato soup is good with grilled cheese sandwiches. Vegetable is good with turkey sandwiches and chicken noodle is good anytime and with anything. especially if its cold outside and you don't feel good.

I've never had soup and I'm too chicken to try it. I'm such a picky eater.. if I don't like what it smells like I won't eat it. I don't think I'll ever eat it. My kids love it though! They love cream of mushroom, chicken and beef noodle.

I think the best soup I've ever had and continue to have *grin* is the Russian "Borscht" - I finally learned how to make it from my Ukrainian friends and it's best after it's sat in the fridge for a day to marinate :D. It's a long process to make it, but it's so good and filling - and of course, anything you can put sour cream in I like *grin*.

The classic chicken soup is a must. It's very relaxing, especially in times when you feel sick and you can't eat things besides soup-based foods! I also love "sinigang" a popular sour-soup stew dish here in the philippines. This ranges from pork, shrimp and fish stews that's made cooked in tamarind broth.
