Change of Plans

I had planned on putting thin slices of potatoes in a casserole dish, season them, then season my chicken thighs, put them in the dish, then mix cream of mushroom soup with some mushrooms and milk, then pour that over the thighs and bake them...BUT...I am sorry to say...not sure how it happened, but I was out of Mushroom soup. Sooooo I ended up seasoning the thighs, and then putting BBQ sauce on them and baking them on a rack sitting on a throw away pan. Then I had mashed taters and Collard Greens with some ChowChow on them. Always have a back up plan. LOL

I live on Plan Bs all the time. I don´t use cream of mushroom soup but thick cream. And mushrooms.
