Whats For Dinner?

I haven't done a "what's for dinner" post in ages. I felt ambitious today and made a pot of tomato (spaghetti) sauce. I breaded some eggplant cutlets and have them in the air fryer. We'll have them with a side of whole wheat spaghetti. My version of a healthy meal that traditionally would be lots more calories. Wednesday seems to be pasta night here most weeks. I love pasta

@@Marilynda1235 I eat only once a day.No breakfast;no lust.Only dinner is sufficient for me to survive.Today I'll have boiled potatoes;lentils and a glass of cow milk mixed with honey in my dinner.I'm vegetation.

My uncle only eats once a day also. That's not something I could do as I get hungry half-way through the morning.

@Shivram59 that's good that you're healthy and are satisfied with eating only once a day. Sometimes I wish I could do that.

@Marilynda1225 I understand.A few years back I used to eat thrice or sometimes even four or even five times day.Then one day I sudden and un deliberately started eating once a day.I don't know how it happened.Now it has become my habit.I'm fit and well;don't have any physical problem.

We tried whole wheat pasta but it's not something we Italians arrive to like.

@Marilynda1225 I make myself the "egg" pasta (fettuccine, tagliolini, lasagna sheets, tortellini and ravioli). I buy the durum wheat pasta, except the orecchiette, that it is possible to make at home.

@LadyDuck I've never tried making my own pasta but maybe one day I'll be ambitious enough to try. I love pasta so much that I swear I must have been Italian in a past life

@Marilynda1225 It was amazing! Did you notice my new word that I wrote in my comment? LOL. It was an autocorrect, but I can't believe my phone autocorrected to a word I didn't know existed (absorbdelicious). I was trying to say "absolutely delicious."

I love eggplant and I bet that those cutlets would be so yummy! Sounds like yummy and filling meal. My daughters and I love pasta but then husband is not so fond of it. We will make it when he is away for business trips or business lunch/dinner. I am yet to decide what to cook for dinner.. would be something quick.

Pasta is one of my favorite meals. I try to eat meatless meals once or twice a week more for variety than any health reason.

I get the thin spaghetti and it isn't too bad but yes I agree that generally it's gritty

Drumsticks and tater tots sounds good. We eat spaghetti or some sort of pasta usually twice a week. We've switched to a few meatless meals to stretch our grocery money

We had a kind of late lunch. There's a little diner about 30 mins from where we are staying that a friend owns, and we go support it whenever we can. Their sammiches are huge and delicious. I had a Monte Cristo sammich and smoked Mac and cheese,with a sweet tea. Only ate half of it at lunch, and just finished the other half about thirty mins ago.

@Marilynda1225 This guy is AMAZING. He smokes all his own meat. I didn't take a picture the other day, but I usually do. I't's just him and his wife. And I love his food, and supporting small business. They do everytthing themselves. from making their own sauces.

Your supper sounds delicious-I'll be right over. I did quarter chicken pieces, baked squash (my absolute favorite) and mashed potatoes. I put a few tablespoons of leftover squash into a container so that Grandpa can bring it over to the girls tomorrow. They LOVE whatever he brings and eats. He doesn't always get all of his own food, as the 'baby birds' often polish off what is for them and then ask for more from him. Squash is kind of an acquired taste, so it is good to expose them to this now, and if their little palates don't like it now, eventually I hope that they will.

It's surprising that the girls like squash but as you said exposing them to it early will expand their palates. Poor Grandpa having to share his food but I'm sure he loves it.
