How do you use up your left over fruit and veggies ?

I think that we all have fruit and veggies that are sometimes left over from your regular meal making ...so, what do you do with yours ?
Do you simply throw them away to make room for fresh, or do you freeze , or do you have idea quick and easy ideas to use them up ...favourite recipes etc ?

If I can make another dish out of them then I would. If not, I still don't throw them away, instead I use them for compost.
