How do I start an apple/pear tree from a sprout?

We have a couple apple and pear trees. I see small sprouts coming up from the roots of these trees and would like to replant some of those sprouts elsewhere in our yard. I've tried digging them up and replanting with plenty of water and fertilizer, but they died. Anyone have any tips or hints? Thanks!
