How about this recipe: Baked Apples Ingredients: 2 apples, cored 2 tbsp. walnuts, chopped fine 2 tbsp. dried apricots, diced fine 2 tbsp. raisins 1/2 cup Orange juice , or apple juice 1/2 tsp. Cinnamon pinch of allspice pinch of Nutmeg 1 tbsp. brown sugar Preheat oven to 350 degrees. In medium size bowl combine walnuts, apricots, raisins, sugar and spice Mix until all ingredients are covered with spice and sugar. Spray the bottom of an 8x8 baking pan with non-stick pan. Place each cored apple in the baking pan and stuff each apple with as much of the filing as possible. Any remaining filling you place in the baking pan with the apples. Pour the juice over the top of the apple. While baking , occasionally baste apple with the juice and remaining filling. Bake 1 hr. and 20 min. , or until soft, covered with aluminum. For a firmer apple you could bake for less time. Place a baking sheet underneath pan covered with aluminum to drop any spillage. Serve as is, or with a dollop of lite whipped topping.

This is the recipe I u se when I make baked apple: http://www.recipesforvegans.co.uk/bakedapple.html The advantage of it is that it doesn't use sugar so is suitable for diabetics and is healthier too!

Well, I am an omnivore, but I did bookmark the site for future use. Ideas for healthy veggie dishes are hard to come by. At least ones that aren't smothered in butter, salt, sugar or cheese..... So thanks for the site!

I do baked apples more like free-standing apple pie. Mine are surrounded by crust, and for dessert or midday treats. I peel and core the apple, then place atop a circle of dough (usually I just use the refrigerated pre-made kind). Your proportions for cinnamon/brown sugar/butter sound similar to mine, only I put one pat in the core and one on the top of the apple. Then squirt with just a bit of lemon juice and pat the spices around the outside. Be sure to add just a tiny pinch of salt (like 1/8 teaspoon) to make it taste more apple-y. Then pull the dough up the sides and pinch at the top. cut a slit or two out near the top and bake at 350 until the crust is golden. I like to serve with cream (or ice cream). definitely not figure friendly. A great addition to this is lemon zest, orange zest or nutmeg.

I have seen these kind of apples. I always thought that adding a caramel sauce would be lovely with it. As for figure friendly, I'm over 8 months pregnant. lol. No worries there right now! In a few months, definately have to watch this kind of thing.
