Mom's Easy Cheesecake

Since today is Mother's Day, I've been thinking of my Mom. She used to make this cheesecake all the time for family parties. It's the first cheesecake recipe I've ever tried. It is really easy to make, and good. Crust: 16 graham crackers, ¼ cup melted butter—mix together and line pie pan (or just buy a ready made graham cracker crust—I like to use the chocolate ones). Filling: 2 8oz. Philly cream cheese, ½ cup sugar, 2 eggs, 1/2 tsp. vanilla Beat eggs thoroughly, add sugar and beat; add cream cheese and vanilla, blending in. Bake in 350 oven for 30 min. Cool for 10 min Topping: Mix ½ pint sour cream, 2 Tbs. sugar, ½ tsp vanilla. Spread on cheesecake. Put back in oven for 5 min. Or—Use a fruit topping instead, like blueberry, cherry, or apple pie filling. Don't bake, just refrigerate to get it cold.

I absolutely love cheesecake. I could eat it everyday. I believe it came straight from God. It always tastes better with fruit filling on top. My favorite topping is cherry filling. Blueberry is good, too. Thank you for this recipe.

This does sound so easy and delicious. It will be a great recipe to make with my daughter she is 9 and wanting to learn how to cook. Thanks for the great recipe.

This appears delicious and easy to make. I love cream cheese. I think for the topping I would use a fruit filling, as it is less fattening.

I usually cut a wedge of cheesecake, and then put on the fruit topping when I serve it.

Brilliant! Our Mother's Day (we call it Mothering Sunday) was back in March, but I never, ever pass up the chance of gathering another Cheese Cake recipe. I don't know what it is about them, but nothing is as good as a cheescake!

I love cheesecake too. What I think is crazy is how much they charge for a piece of cheesecake in a restaurant, when it can be so easily made at home.

That looks like an easy Cheesecake recipe. Other than the ones made with gelatin or using pudding mixes, most have taken a llot of work. I really love cheesecake, although I can only have a small slice due to my weight, and it will be hard to get the cream cheese as my husband is being 'very helpful' in telling me not to buy any (and then will pick up some candies) but it would be good for when we have company.

Thanks Karen for this cheescake recipe. I just love cheesecake and so does my family. My kids especially, they are both married now with families of their own, and like me they enjoy a great EASY cheescake recipe.
