Do you have a good recipe for Eggplant Lasagna??

Anybody with a good recipe for it? I had it a few months back and fell in love, it was like the first I tried eggplant, but in lasagna it is delicious! Please if you have a good recipe for Eggplant Lasagna I would like it! thank you :)

This is one of my favorites also! EGGPLANT LASAGNA 1 lg. eggplant 2 c. flour 3 c. Italian flavored bread crumbs 5 eggs 1/2 c. milk 8 oz. shredded Mozzarella cheese 1/4 c. grated Parmesan cheese 2 c. olive oil 1 lb. Ricotta cheese 5 c. flavored tomato sauce Peel and slice eggplant 1/4-inch thick in size. Beat 3 eggs and 1/2 cup milk in deep bowl. Flour eggplant, dip into egg-milk mixture then into bread crumbs. Allow to dry in refrigerator for 1/2 hour. While eggplant is hardening mix Ricotta cheese, 4 ounces Mozzarella cheese, Parmesan cheese, and 2 slightly beaten eggs together. Refrigerate. Heat 2 cups olive oil in frying pan. Cook eggplant slices until golden brown, about 3 minutes each side and drain on paper towel. Preheat oven to 350 degrees. In 2-quart casserole add 2 cups tomato sauce; layer eggplant then all of cheese mixture, eggplant, remaining 3 cups sauce. Top with remaining 4 ounces of Mozzarella cheese. Bake at 350 degrees on center rack about 40 minutes. Allow to cool 15 minutes before serving. source: www.cooks.com

I have the largest pleasure in teaching that income of my Mother.I wait that they like, it is one delights. Lasagna of Eggplant INGREDIENTS: 3 raw big Eggplants 1 can of sauce of tomato of his/her preference 1 bundle of cut cilantro and small pieces Olives without pit cut 300 g of cheese sliced muzzarela 300 g of sliced ham 2 spoons of olive oil Cheese catupiry WAY OF PREPARATION: 1-Cut the Eggplants in fine slices,in the sense of the length. 2-In a baking pan difficult rectangle,put in the bottom the two spoons of olive oil and some tomato sauce. 3-Put a Eggplant layer then. 4-Cover with tomato sauce,sprinkle with olives and cilantro and soon afterwards put a ham layer. 5- To proceed, put a Eggplant layer,cover with tomato sauce and for top it puts a layer of cheese muzzarela. 6- Repeat the steps 3 and 4 to form more two layers. 7- Put over the last layer cheese catupiry, the taste, and cover the baking pan with aluminum foil. 8- Light to the oven in temperature of 180th degrees for about 30 minutes to cook. 9- After that it removes the aluminum foil and leave for more 5 to 10 minutes to grate. 10- Serve hot. Try It is one delights.
