Low Fat Spinach Lasagna rolls recipe

Today I'm into Italian food. I made my husband's favorite meal which is spaghetti with meatballs. This is another one of his favorite meals. 8 lasagna noodles (8 ounces) 2 teaspoons olive oil 1 medium onion, finely chopped 3 garlic cloves, minced 10-ounce package frozen chopped spinach, thawed and squeezed dry 3/4 cup part-skim ricotta cheese 1/4 cup grated Parmesan cheese 1/2 teaspoon salt 1/4 teaspoon black pepper 1 egg white, lightly beaten 3 ounces very thinly sliced baked ham, cut into strips 14 1/2-ounce can no-salt-added stewed tomatoes, chopped with their juices 1 can (8 ounces) no-salt-added tomato sauce 3 tablespoons chopped fresh parsley 1. Heat a large pot of water to boiling, and cook the noodles until just tender. Drain. Transfer to a bowl of cold water to prevent sticking. Meanwhile, preheat the oven to 400F. Spray an 11*7-inch backing dish with non-stick cooking spray. 2. In a large nonstick skillet, heat the oil until hot but not smoking over low heat. Add the onions and garlic and cook, stirring frequently, until the onion has softened, about 7 minutes. Stir in the spinach and cook until the spinach is heated through, about 4 minutes. Transfer to a large bowl and cool slightly. Stir in the ricotta, Parmesan, salt, pepper, and egg white until well combined. 3. Lay the noodles flat and spread 3 tablespoons of the spinach mixture on top of each. Arrange the ham on top of the spinach mixture and lightly roll up each noodle. Place the rolls, seam-sides down, in the prepared baking dish. 4. Spoon the tomatoes with their juices and the tomato sauce around the lasagna rolls, cover with foil, and bake for 15 minutes. uncover and bake for 5 minutes longer, or until the sauce is bubbly and the filling is hot. Place lasagna rolls on 4 plates, spoon some sauce on top, sprinkle with the parsley, and serve. Suggested accompaniment: A salad with cherry tomatoes, escarole, and cucumbers in a reduced-fat Italian dressing. I hope you will enjoy this recipe. Take care.

HI VotreAmie, my friend, what ever you are in today, its awesome. awesome means awesome my friend. this recipe sounds so tasty that my hubby will just love to give it a try one day. i would further like to share it up with my other friends and my cousin too. i think the best day to cook this is on sunday , both of us are free and we are expecting some guests too for lunch. so its better to try this new recipe when they come , so that we also know how other likes it. thanx a lot. i have got a new recipe for my guests then. have a very nice day my friend, happy mylotting and keep posting some good recipes like these alwayz.
