What's your favorite fritata recipe?

I love to do mine with pasta in the bottom of the pan, sliced mushrooms, zucchini, yellow squash and eggs whipped with a little parmesan cheese, salt, pepper and rosemary. then baked till it's set and topped with a little monterey jack cheese.
