Oven fried zucchini/summer squash

I love fried zucchini...but I don't love the frying. It's messy, (and a little dangerous) and I know it's also not very healthy for me. I have a ton of zucchini from a neighbors garden and I was hoping to "fry" some of it. I have heard of ways to "oven fry" but I have never tried it. Does anyone have a recipe for oven fried zucchini? I would also be open to any tips in general for oven frying that I can apply to making other things.

Yes I do this all the time. You just take a cookie sheet and spray it with non stick. I usually just rub on a bunch of olive oil. Batter your squash and then place on cookie sheet. I bake at 375-400' for about 15 minutes and then flip and fry for another 15 minutes. It is sooo good and definatley a little healthier for you,. It dont brown them as much, but you can leave them in there for as long as you like. You dont need to use as much oil either. As far as other foods go, you can do this with just about anything you want to fry!

Just what I was looking for. Thanks! I think I will also use oilve oil. Would it be ok to line the pan with tin foil?
