Cheeseburger Soup! 1/2 Lb. browned Hamburger 1 tbl. spoon butter or margarine 3/4 cup chopped onion 3/4 cup shredded carrots 3/4 cup diced celery 1 tsp. dried basil 1 tsp parsley 3 cups chicken stock 4 cups diced potatoes 3 tbl.spoons butter 1/4 cup flour 2 cups american cheese cubed 1 1/2 cups milk 3/4 tsp salt 1/2 tsp. pepper Saute onions, carrots, celery, basil, and parsley in 1 Tbl. butter or marg. Pour into stock and bring to a boil. Add potatoes and beef and simmer for 10-12 minutes. Melt remaining 3 Tbl spoons of butter in skillet. Stir in flour and cook on low until bubbly. Whisk the milk into the roux and stir until thickened. Stir into soup pot with other ingredience then add the Cheese, salt and pepper. It's wonderful!

This sounds so good. In the winter time I love making a nice big pot of soup or chili. Come next winter I'll definately be trying this. Thank you for passing it along. **AT PEACE WITHIN** ~~STAND STRONG IN YOUR BELIEFS~~
