I love potato wedges tossed with olive oil, salt, and rosemary and baked/broiled. I also love garlic smashed new potatoes with skins left on.

Weasy's Potato Soup INGREDIENTS: 7 to 8 cups of cubed peeled potatoes 4 cups chicken broth 1 cup water 2 large onions, chopped, about 2 cups 3/4 cup chopped celery 1/2 cup thinly sliced carrots 2 tablespoons dried dill weed 1/4 cup butter 1/4 teaspoon pepper 1 to 2 teaspoons salt, or to taste 1 can (12 oz) evaporated milk PREPARATION: In a large slow cooker, combine potatoes, broth, water, onion, celery, carrots, dill weed, and butter. Cover and cook on high for 7 hours or until the vegetables are tender. Stir in milk and season with salt and pepper to taste; continue cooking to heat through. Use a hand mixer or potato masher to blend some of the potatoes to thicken soup. To thicken further use instant potato flakes; to thin soup, add a little whole or skim milk.

Have you made twice baked potatoes? I usually "bake" them in the microwave first (about 4-5 minutes, some microwaves even have a potato setting!)...then I cut them open & scoop out the middles so nothing is left but the skins. I mix the potatoes with a little milk, some garlic powder, and cheese...then scoop it back into the skins. I top with cheese and then bake them in the oven for about 4-5 minutes until the cheese is nice and bubbly on top. Home made potato soup is good if you can find the right recipe...

Mashed potatoes with vege's is one of my kids favorites. I also like to make fried potatoes with onions and chesse melted on top with ketchup for the kids. Potatoes au' gratin are good. You can make it into a meal by adding ground beef or ground turkey.
