How do I keep Avocados fresh & How do I know if they are off?

Two days I purchased one avocado. The same day I cut about one quarter of it, & spread it on bread for lunch. This is because, partly, I love avocados, but also because I have read that they help lower cholesterol. Anyway, today, I get it out of the fridge, & the edges & part of the inside were brown. I know the edge can turn brown, I I usually just cut that off. But this time a lot of it was brown. I was able cut a few good bits of green out of it, but not enough. I had kept it in a freezer bag, in the vegetable compartment of my fridge. Is there a better way of keeping avocados fresh, & also, how do I know when not to eat an avocado that looks less than fresh?

It is fine jenny, once an avocado is cut it will start turning like an apple or a potato. The best thing to do when you put it away is sprinkle lemon juice on it, and that will keep it from browning. I keep cut ones about 48 hours. An over ripe avocado will be soft and separate from the peel. If when you cut into one and it is discolored and very mushy, chances are that it is gone over. A good ripe ready to eat will be dark purple in color soft yet still firm.

Okay, this is informative. I suspect that the avocado I had, was almost over ripe when I bought it. I have a lemon tree. They are sometimes expensive here. Do you find that too?

Jenny, I buy lemons by the bag full. This year they are up by 50%. You are lucky to have a tree and use what fruit you can.
