hiding vegetables in food.

I just cam across a recipe that is called blush cake. It is made cooked beets. It also calls for cocoa and honey. Would you try a blush cake. It looks like and easy way to get your kids to eat their red beets if you struggle with them. or maybe you don't like beets either. I think I will try this cake since it doesn't have any sugar in it. There is also another nutritious recipe for brownies with mashed beets in it. since my kids like both cake and brownies I'm going to make this for them this week. I may even make one of them to take to church pot luck next week.

That sounds interesting. I would try it. I have a recipe for black bean brownies that's pretty good too. Thankfully my kids never had any problems eating veggies - but I used to make the brownies for them anyway, since they're so high in fiber and low in fat.

Dump 15 oz can of black beans into strainer then rinse and drain well. Dump into a food processer or blender then add 4 eggs, 1/2 cup raw sugar, 3 Tablespoons cocoa powder, 1 teaspoon baking powder, 2 Tablespoons canola oil and 1 teaspoon of vanilla. Process until well blended and smooth. Pour into a greased 8X8 inch pan. Bake at 350 degrees for 30 minutes or until toothpick inserted into the center comes out clean. Cool then cut. A 2X2 inch brownie has about 80 calories. There are lots of black bean brownie recipes available online, so if you don't like this one, shop around. You're sure to find one that will work for you.

Sounds like a good way to hide veggies. Be sure to tell me how the kids and the folks at church like the beet cake and brownies. Of all veggies, I would have never of believed beets!

Now that sounds GOOD! Beets are sweet anyway, so I doubt you'd need additional sweetener. No that containing sugar normally stops me from making cake!! Other cakes which include veg which I enjoy include carrot cake & zucchini chocolate bread. My very favourite of all time has to be pumpkin cake though. Add some all spice amd it is just irresistable ...

I have eaten carrot and zucchini cake and like both. I just had never thought about beets in a cake or brownies before and thought they were interesting..
