Yes... this is a family recipe which serves four people.. Ingredients 12oz Corned Beef, diced 2oz Butter 1 tbsp Oil 10oz Boiled Potatoes, sliced 2 Medium Onions, chopped Salt and Pepper Method Heat 1oz of the butter and the oil in a large frying pan and gently fry the sliced potatoes, until golden brown. Remove from the frying pan and keep warm. Add the remaining butter to the pan and fry the onions for 5 minutes until soft and golden. Then add the corned beef and the potatoes, salt and pepper to taste and heat thoroughly, turning all the time. Serve your Corned Beef Hash by piling onto a hot dish. If you wish, you can then add grated cheese, a sprig of parsley or sliced, boiled eggs to decorate. Brightest Blessings, and enjoy, my friend.

You're welcome Cinderella. Pro... I believe there is an oven version as well, but I find this recipe quicker. Senility... no way! Deja vu... perhaps.

I like how this version sounds. It almost reminds me of an oven baked version I read a while back... Deja vu? Or just senility setting in on my part?

Actually rather simple really. 2 or 3 potatoes, peeled and diced 12 ounces of corned beef, diced 1 cup of beef broth Optional: add in diced onions. In a skillet on medium heat, combine all ingredients (minus onions if using them). Cover and stir the mixture for a time. Stir and simmer until the potatoes are soft enough for mashing and mixing. Mix all ingredients well.

Addendum: Add in onions at preference. If you want slightly cooked or not really cooked, add it at the end. If you want them sauteed, add them at the start.

Thanks for that, that sounds easier but do you mash the potateos last and then mix together or mix all the ingredients together and then when the potatoes are soft enough, mash them then?? I cant wait to get making my corned beef hash now, will let you all kknow how I get on!!

You can do it either way. I prefer to mix up the ingredients during and when the potatoes reach that consistency then try to smash up. A couple of times I've done the mashing seperately after cooking the potatoes alone for a bit. The corned beef should be diced up enough before hand so at the end you'll get more of a hash (in either mixing scenario). If not, having some fine chunks of corned beef is still pretty great in the hash. Hope you enjoy the cooking.

Can I come along on this one for the ride please Cinders? I love corned beef hash too. Whilst I have always thought it a bit like a firm shepherds pie with corned beef, I'd love to see a really good recipe for it. It would go with my $50 budget exercise too.

Well, to tell you the truth, I always just buy a can of it from my local grocery store. Then, you spray pam, or even spread some butter on the bottom of your frying pan. Spread the corned beef hash across the whole pan, and then let it cook. I like it when it gets crispy in some spots, it's really good. I always eat it with Over Medium eggs, and ketchup, lol.

Nothing wrong with that Jen. Whatever works is what I say.
