I don't know if it is the best recipe but right now, it is our fav! Basically it's cedar plank salmon with a cilantro pesto. First, you buy a salmon. We usually get ours from Costco so it's the HUGE ones. Then you get some cedar planks (they are used for grilling, find at most grocery stores or healthfood stores, cooking stores). You soak the planks for at least 2 hours (the more the better). Then heat up the grill when you are ready to cook it. You take the salmon out of the package and rinse it off with cold water. Then you take some olive oil and rub it down (both sides really well). Then place it on the cedar plank. Lightly salt and pepper it to taste (or lemon pepper tastes good too but not to much seasoning). You will want to grill the Salmon for about 25 mins over medium heat. If it's a gas grill, watch it carefully for it tends to catch on fire mor eeasily then a charcoal (if that happens, just keep a spray bottle handy). When it starts to get flaky, it is more then likely done. While the salmon is cooking, you get one bunch of cilantro, 3 cloves of garlic and put them in a food processor. Blend it just for about 10 seconds. Add olive oil, some salt, pepper and some lime or lemon juice to it just enough to get it soggy and blend some more. The orginal recipe called for alot of olive oil, but I don't like to use a lot of oil. Blend them really good so you have a sauce or paste.
