Mine is totally different from most, but people always seem to like it. Mom always made it this way. Make mashed potatoes, just like you were going to eat them, seasonings and all, then cool them in the refrigerator.
Add chopped boiled eggs, shredded or diced cheese, diced onions and diced pickles, then add enough mayonnaise to make it creamy.
It's better if it's refrigerated overnight, but it's good right away, too!

My family has always made ours with potatos, oinion, sweet pickles, salt and pepper, hard boiled eggs, and miracle whip no mustard as no one in my family likes it. We do stick to one kind. Mine.

I like the "german style" of potato salad the best so that's what I tend to make. Here's is the recipe I use. I made it for a german themed party I went to and people really liked it. You can add hard boiled eggs to this too if you like. It goes well.
3 pounds new potatoes
1 yellow onion, quartered
1/2 pound bacon, diced
1 large red onion, diced
3/4 cup cider vinegar
1/4 cup olive oil
Salt and freshly ground pepper
8 green onions, thinly sliced
1/4 cup chopped fresh parsley leaves
Place potatoes in a large pot with the onion and cover with cold water. Cook until tender. Drain, discard the onion, and cut the potatoes into cubes when cool enough to handle. Place the potatoes in a large bowl and cover to keep warm.
Heat a large saute pan. Add the bacon and cook until crisp. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Add the onions to the rendered bacon fat and cook until soft, about 3 to 4 minutes. Carefully add the vinegar and cook for 2 more minutes. Whisk in the oilve oil and season, to taste, with salt and pepper. Add the hot dressing to the potatoes and toss gently to coat. Fold in the green onions and parsley. Season again with salt and pepper, to taste.

I don't make potato salad. My hubby doesn't care for it too much. And I can't say I do either. My best friend makes it with mayo egg and relish. I have an aunt who made it with egg and mustard. Neither really appeals to me.

I make mine with olive oil, vinegar, green onions, parsley and salt. My hubby and I both have a bit of a tiny little food allergy to Mayonnaise. We both still eat it now and then but, we like the taste of the way that I make it better than with mayo. It is different but really good.
Now I feel like I need to make some! LOL! And, funny that you should start this discussion because I was thinking about it last weekend when I was planning the menu for the week.

I make my potato salad with potatoes (obviously), carrots that I boiled and dice, canned sweet corn kernels, mayo, black pepper and a little salt. Nice and simple. The corn adds the special touch for me. I also like to make it more smooth with bits of potato chunks rather than totally chunky. I only ever found one potato salad that I liked as much as mine when buying take out but this is because of the consistency.
I do stick to my same recipe all the time, although I have had potato salad with mustard in it and it isn't bad at all.

I have always made mine with mayo, mustard, eggs, celery, onion,pickles and top it with a couple of bell pepper rings around slices of hard boiled egg and topped with paprika. My kids always know the difference when I make it and when I just buy some at the store.
