Liver and bacon casserole!

Many people say they hate liver. Liver and Bacon is one of my favorite meals, made as a casserole with onions and tomatoes and served with creamy mashed potato. Tell me why you love it - or hate it!

I've never even heard of this, but I like everything in it, so I imagine it would be okay. I'd have to try it before I'd know for sure.

Here is a recipe. It's very simple: Liver and Bacon Casserole Ingredients: 375 g (12 oz) calves liver cut into strips 2 tbsp seasoned flour for coating 3 rashers of bacon chopped 1 large onion quartered and finely sliced a little oil to brown the above 3 medium carrots thinly sliced 2 cups hot chicken stock or one cup and a tin of chopped tomatoes 1/2 tsp dried basil Method: Toss the liver in flour to coat. Brown the liver, bacon, onions and carrots in the oil in a frying pan/skillet. Put into a casserole dish. Add the stock, tomatoes and herbs. Cook on medium for 20 - 30 minutes or for up to an hour on a low setting (the longer and slower it cooks, the better the flavour). Serve with potatoes (my preference is mashed and creamed) and mixed Vegetables. Serves: 4 * This works very well in a slow cooker. Just follow the steps above but add the liquid to the browned liver, bacon and vegetables and bring to the boil before transferring to the slow cooker.

Thank you for this recipe. I did a mylot search for liver to find some new ways to cook it and this sounds delicious. We have liver quite often... it's cheap and it's so good for you. I find it really helps at "that" time of month and if someone is coming down with a cold a good dose of iron'll help. I can't wait to try this one.

I knew it contained iron, of course, but it had never occured to me that it might be good for those two conditions. I can well understand that it would be.

I believe it's not to everyone's taste! Some don't like the idea of liver, others don't like the texture.

I'm not normally fussy but that's something I don't think I have even tried. Probably because liver, casserole and onions are 3 of the 5 or 6 things I don't like. And I never used to like bacon. I'd have the tomatoes and creamy mash though. This is the only picture I have of any kind of food. Funnily enough, I have never eaten pumpkin nor even carved one.

I absolutely love calves liver. My brother and I were considered odd because out of 6 kids, we were the only 2 that loved liver and onions. My mother would cook it with bacon and boy we would chow down.

I like beef liver, use to not like it when I was a kid, but now for some reason I love it. I guess my taste buds changed.

Ewwwww, and eugh is what I say. :p I don't like liver not one bit! I like lots of things, but I don't like liver, I don't mind kidney though, maybe I'm just a bit strange, but I don't like steak either, I like chocolate, did you know that? ;) I think that's something my Mum and Dad might like though. :)

I think I did have an inkling that you liked chocolate. Now I wonder what chocolate coated liver would be like? Hmmm ... interesting! Chocolate coated Beef Jerky? Kidneys in a chocolate sauce ... (that might actually work).

I like liver and bacon, but I don't like casserole. I don't really know why I like it, I just do and it's very good for you.

I love the rich thick gravy you get from liver. I haven't had that for ages, I think I'll make some. Can you freeze it? I always make too much.

Liver and bacon is also one of my favourites as well. Mum used to make this once a week when we were little as it was, as she put it 'good for us' there would be loads of gravy which we would soak up with a thick piece of bread. My kids never liked the taste very much so over the years I've stopped cooking this, I will have to start again!
