Carrot Recipes

I like to eat healthly and use natural foods as far as possible..... BUT I'm bored of eating plain old boring carrots, be them raw or boiled!!! Can anyone help me to jazz up carrots, make them exciting again and put a bit of spice into them, but keeping them good wholesome and healthy? so no deep fried recipes please!!LOL

Slice into little "coins" and steam. When they're done mix a little dill weed or any other herb you like with a small amount of butter or margarine and allow it to melt over the carrots. Grate carrots fine, drain a can of pineapple chunks, or crused pineapple. Soak a handful of raisins in the pineapple juice til they're plump. Drain the juice off the raisins and mix the pineapple and raisins with the carrots and add a little mayo for a carrot raisin salad.

Thank you. I used to make it for family get-to-gathers, but one daughter-in-law and I were the only ones that like it. I had to really cut it back to one or two person size. ;)

Take 8 oz of softened cream cheese, 1 cup mayo, 3/4 cup of finely grated carrots, 2 T. grated onion 2 T. minced green olives with pimento Dash of white pepper Mix chill and spread on a good bread or put in a pita pocket with some lettuce.

I like to toss them with olive oil and garlic, then roast in the oven.

My grandkids will eat carrots by the bagful if they have ranch dressing to dip them in! Make or buy a low-fat version, or try them with another dip recipe you like.

I like to boil them just till tender/crisp and then stir them around in the pan with a little ginger and garlic (I do use a pad of butter as well and sometimes a tbs of brown sugar) we also very much like a recipe called crown jewels - you can find this same recipe at www.allrecipes.com under the name carrot patties.

Well thanking for all your quick replies. I wasn't expecting so many so quickly. I hope i can be able to help some of you out as quickly when you need help. Some very good ideas, and i shall be trying some of them out very soon. But if anyone else has any more ideas hidden away please post as I shall still be grateful for them.

hi anne, you can try baking those carrots and season with salt, pepper and paprika for some sweetness. Some would add olive oil but i'd skip that. Slice them up, 2-3cm slices, season and bake for 10 minutes. You can also use a fat free Express pan or non-stick pan to do this.
