Meatloaf-It's what's for dinner

I am just getting ready to get off here for a bit and get started on my meatloaf dinner, but I have a question to leave you with... Do you do anything special with your meatloaf? Do you have a special ingredient or favorite recipe? Please share. Me? I just don't plain ole meatloaf with ketchup on top.

I take a pound of ground beef and add one egg, some bread crumbs, some worchestershire sauce, maybe a splash of soy sauce, some salt and pepper, some oregano, basil, and parsley, some onion and garlic, and then add barbecue sauce. I mix it all up with my hands and cook it at 350 for however long. I take it out about 10 mins before I think it's done and spread barbecue sauce over the top and let it bake for 10 more mins. The barbecue sauce makes kind of a glaze over the top. I like to use Sweet Baby Ray's. It's got a bold, sweet flavor.

I absolutely have a favorite recipe, and I haven't found one to even compare. It is the famous Ann Landers recipe- it uses lipton onion soup mix and oatmeal. (She also calls for accent but I have never used it.) It is SO good. I also like to use ground beef...not ground chuck (if I am going to go out in an unhealthy animal product dinner, I am going to go all out! lol) I think the ground chuck is way too dry for my taste, so that is why I go with the higher fat content beef. I do not like meatloaf with the tomato sauce/ketchup cooked on top, but I do eat it with ketchup. This is the second meatloaf discussion in two days...I think it will be on my menu for next week...it sounds good and you both have me wanting it now.

That does sound good. I actually put some dried chopped onion in mine, which I've never done before cause hubby does't like it. I always use ground beef for everything I make, I've never even bought ground chuck. If I'm browning the meat first then I drain the excess fat, but I think the beef is better tasting. Thanks for sharing.

I actually have a recipe that is partly mine, a hybrid of sorts; I found a suggestion online once to stuff meatloaf with spinach, but I made it with spinach and provalone cheese. It's a very good mix, although it can be hard to do. Plain meatloaf is also a good one, too! ;-)

Hmm, that sounds, um... interesting. I'm trying to imagine it. My first thought was just YUCK! but after thinking for a minute I suppose it could be good.

The last few times I made meatloaf I used baby cereal instead of oatmeal since I have like 10 boxes of it leftover. My daughter does not like to eat it anymore. I don't normally do the ketchup thing on meatloaf.

i always cut it and mixed with egg and fried. this will always be my breakfast. my dinner will be done outside the house because i live alone and lazy to cook. i eat only in the house if i have visitor who can cook me and we eat both for a dinner.

We don't use ketchup in our meatloaf at all. We use tomato soup mixed with tomato paste to thicken it a bit. I mix it into the meatloaf itself and then pour some over the top as well. I also mix in bread crumbs but not just the plain ones the ones that are flavored with garlic. Oh how I love garlic. I think it should be in everything.

I use italian style bread crumbs, and I used some garlic salt in this one. But I can't live without the ketchup on top. For me, that's the best part! But your soup idea sounds good. I just might give that a try sometime to see how it comes out.

meatloaf sounds mighty good right now! lol i usually have some mashed potatoes that still have the skins on them with some milk and a little bit of garlic. my granny always makes creamed corn with her meatloaf and she puts tomato paste on it while it cooks and that is always good .
