Is it Chili or Chilli?

Either way does anybody have a good personal recipe for chili con carne please. I have some ground beef that I want to use and a tin of red kidney beans but I lack something original to go with them. I thought of chili for supper tonight, but with a twist. Anything to inspire me please.

I make evil chili. It is evil because it is so full of flavor and tastes so good on the tongue but right after you swallow it you realize the back of your throat has been set ablaze! Not something I would share with a friend of mine. But you could try this one... fry your ground beef with 1/8 tsp cayenne pepper 1/4 tsp black pepper 1 TBSP chili powder 1/4 tsp cumin (or just get a packet of McCormick mild chili seasonings) get a can or two (to suit your tastes) of diced tomatoes with green chilies or diced jalapenos (again to suit your taste) drain half the juice and toss them in the ground beef after it is cooked and the fat it drained. then add your kidney beans again draining half the juice. I use a can or dark and a can of light kidney beans but that is just for color. and I also add 2 cans of pork and beans, fat removed, juice left in. Simmer it all together for about 30 minutes and voila! Con carne simply means with cheese so when you are ready to serve your culinary masterpiece just sprinkle some shredded cheddar or monterey jack over the top of it and there you go....Chili con carne :) If you are going to make it hot have some sour cream handy to spare your adoring family the after burn.

But you'll share it with me. Thanks Cyn - I think. LOL. Looks very very good indeed. I thought that con carne meant with meat, surely cheese is queso? Whatever, it sounds good. Must remember the sour cream or yoghurt. Don't want to set them ablaze. Did I ever tell you about the piri piri chicken! Nearly made myself a widower.

See what sleep deprivation does to me...you are right...carne is meat. Queso is cheese. Bah! I need to stick to english when running on 3 hours of sleep and battling a migraine. And the recipe I shared with you wasn't for my evil chili Just a quick chili recipe that I adapted from my evil chili recipe for the people who can't take the heat

I knew that i was right, I just didn't want to make you feel that I was being superior. LOL. Stop that. It hurts!! Chili seeds there are very painful. HELP!! If that was your "mild" recipe then I think that we will need the Fire Department on standby for the truly evil one. XX

Hey pike I am sure you have a dozen or more responses by now. But this one is easy, brown your hamburger, drain, add the can of beans with a can of petite diced tomatoes add some chili seasoning mix. Cook together about 45 minutes to an hour, you might need to add s little water. If you have an onion cut that up in there, a green pepper is also nice. Make a pan of corn bread like I gave you once before and there you are :))))

That looks fairly straightforward and delicious Angel. I actually made a quick version of BCMike's cooking it for three hours and it was very good. I used medium chilis and managed to not put chili oil in my eye, mouth or other sensitive parts! We didn't have corn bread, but it is easy to make, I just followed your recipe. Yummy. Thank Angel. XX

I love chilli from time to time which is quite weird as I don't usually like mince! lol I wish I could help with some inspiration but I am afraid the old mind has gone quite blank. I do hope that it is nice and tasty though and don't forget the pitta bread - chilli just isn't the same without it! xxx

Pitta bread! Doh. Do you know what I bought? Naan bread! Still, it will soak up the juices. The recipes above are all so wonderful. I have got a big pot of chili stewing away right now Mummymo. It smells delicious. Mmmmmmmm. Brownie points for me I hope tonight.

Naan is wonderful too! for some reason I tend to use Naan for chicken skewers and tikka and of course for making pizzas - maybe that is why I didn't associate it with chilli! Pitta we usually use for Pitta pockets - you know with cold meat or chicken and put salad in too! Good grief I am so hungry - I think I can smell some delicious chilli from here! xxx

The basics of a good chili recipe, p1kef1sh, are essentially diced bell pepper, diced onions, and tomatoes. I really like a lot of chili powder also. Sometimes I want to make a dish like chili or meatloaf and find that I do not have bell pepper so I have found that using a can of Sloppy Joe mix does the trick quite well and cuts out a lot of the work. Wow You have received lots of really delicious recipes here which is just as well as I have not got one. There is only I and my eldest daughter that will eat so I usually have when I go to a Mexican restaurant so I don't ever get to make. Enjoy your evening meal. Ellie :D

I have done very well I think Ellie. I have a pot bubbling away right now and can't wait to dive in - not literally of course. The Mexican restaurant here is awful. So if we want halfway decent food we have to cook it ourselves. Still, not so far to stagger home afterwards!

Oh man i love chili. I don't have a recipe though. I too use can beans, groud beef and then one of those chili mix packets. Oh that sounds so good i think i might back that for dinner tonite! sorry i couldn't help though, but you made me hungry

We usually buy it ready made, but from what I know, if you get some jalepano peppers, one or two, add some tomato sauce, coriander or Chinese parsley, plus oregano, you can make a basic chili con carne by simmering them slowly together. You can add other things such as regular red and green peppers, and you could grate cheese on top when it is done, but I have not fancy recipes for it.

I spell it chili. As for chili recipe. I put corn in my chili. And diced tomatoes with green chillies. And I add black beans. Gives it a unique flavor. As for CARNE i did come across a neat recipe. 2 Tbsp red chili powder 1 teaspoon chipotle chile powder 1 Tbsp ground cumin 2 teaspoons ground oregano 1 teaspoon thyme 1/2 teaspoon ground coriander seeds 3-4 Tbsp water 4 strips bacon One 2 1/2 pound chuck roast, cut into 1/2-inch cubes Salt 1 medium white onion, chopped 3 cloves garlic, minced 2 jalapeƱo chili peppers, stems removed, seeded, ribs removed, minced 1 14-oz can whole tomatoes 2 1/2 cups water 1 Tbsp freshly squeezed lime juice 1 teaspoon sugar 1 14-oz can red kidney beans, drained and rinsed 1 teaspoon cornstarch, dissolved in a couple tablespoons of water Salt 1 In a small bowl mix the chili powder, chipotle chili powder, ground cumin, oregano, thyme, and ground coriander seeds. Mix in water so that chili forms a light paste. Set aside. 2 Cook the bacon in a large skillet on medium high heat until crisp. Use a slotted spoon to remove from pan and set aside on a paper towel. Pour bacon fat from the pan into a separate container, reserve. When the bacon cools, crumble it into smaller pieces and set aside.

Mix the cornstarch powder into a little water to dissolve the corn starch (otherwise you'll have lumps to deal with) and add to the chili to thicken it. Gently mix in the kidney beans. Add salt to taste. Adjust seasonings. Depending on the acidity of the tomatoes and lime juice you may need a little more sugar to bring the stew to balance. At this point you can also add a little more chili powder if you desire more heat.

It is spelled chili with one l not 2. Anyways it really doesn't matter how it is spelled, it just has to taste good. I put all kinds of things in my chili that most people probably don't. I use onions and green peppers and celery which I first saute then pour into a cup. I then fry my ground beef and only use extra lean for chili. I add the chili spice to the meat while it is frying so the flavours go right into the meat. I then add the saute stuff I mentioned, after the hamburger is fried and add my tomatoes and kidney beans and pork and beans and add more spices and let simmer for a couple hours. When it is almost ready I throw in some mushrooms so that they only cook for about 10 more minutes. Done.

Oops, not done. I also add a few slices of cheese to it when I add the mushrooms so it melts on top and I don't mix it in. When dishing it out you get from the top so you get some of the melted cheese.

From what I can gather, I think it's 'chili'. Sorry but i do not know how to make chili con carne. I could go cut and paste a recipe from the web but that would be lying because I wouldn't know if it was good or not! My grandma makes it and she's a top cook so I might ask her and have a go making it myself. If I rememebr I'll pass on the recipe.

MY favourite chili is the Texas kind! The main differences between Texas chili recipes and those other chili recipes is that "real" Texas chili has no beans and the main ingredient, after the meat, is chili peppers - whether chopped, diced, powdered, or liquefied. I like my beans with weiners, thank you!

It's chili. I've lived in Florida and Texas, and in each state they have hundreds of chili cook-offs. In Texas, typically there are no beans in chili, but lots of meat and chili peppers. They also often put it over nachos or corn chips. Where I live now - Cincinnati - their idea of chili is much different. Again, there are typically no beans. It's also a thinner fare, more like a spaghetti sauce - and served either with a hot dog (Coney dog) or over spaghetti noodles. It also has vinegar and cinnamon in it. After having had Florida and Texas chili, I have trouble eating Cincinnati chili.

I'm kind of late to the discussion for dinner tonight but I just got stuff to make chili =) I usually brown a little over a lb of ground beef (you can also do ground sirloin or ground turkey) and add to it a large onion, chopped, one or two green peppers (or red) chopped, one large can and one small can chili beans, one large can and one small can italian style diced tomatoes, plain diced tomatoes, or other spiced/seasoned diced tomatoes, crushed garlic, salt, pepper, chili powder (2 tbsp), cayenne pepper. Combine all in a crockpot and cook on low all day (around 8 hours). Serve with shredded cheese. I like mine spicy so if you don't, add less seasonings and omit the cayenne and cut the amount of garlic you use in half.

I am not sure if Chili con carne is the same as regular old chili but this is a super easy recipe I use and it takes no time at all.... 2 envelopes of Original chili seasoning packet (or you can use one original and one medium/mild) 2 cans (the small ones) on diced tomatoes with green chilies 4 cans of kidney beans 1 medium diced onion (optional) 1-2 lbs of ground beef Brown the beef, and then follow the instructions on the envelope packet of the seasoning....toss in the tomatoes with chilies, the beans, onion and let boil. I am not too much into spicy, spicy food, but I have ot admit mixing the origianl with the medium gives it a kick without kicking you too hard. I use serve my chili with a dollop of sour cream, sprinkle of cheese. Oh and I always make this much no matter the size of the crowd because it is a definite second helper meal....plus, I always toss some in the fridge for later. I just like to put a can of diced tomatoes in my chili. Growing up, we also served it over rice with cheese grated over the top. My husband thinks it's weird to eat chili over rice though, so I don't always cook rice to go with it. I will cook a pan of cornbread and you can crumble cornbread into your chili after you serve it, which is also good.

I always used to serve it with rice. But these days find that too much to manage together with the chili. Cornbread - which I have had to learn to make as you can't buy it here - is good with it too. Thanks phoenix.
