What is your favorite (vegan) sandwich?

Now that it's getting warmer outside, I don't feel like cooking so much and prefer lighter meals. What are your favorite vegan sandwiches? I've been having a lot of hummus, tomato and cucumber sandwiches. Those are great, but I'm curious what others make too.

I'm not much of an actual sandwich person unless you count sub type sandwiches. However, I love making wraps in the summer using BBQ flavored baked tofu (store bought, I'm not that good of a cook), hummus, and parsley. It is so good. I also like to cook in the summer despite the heat, but mostly because the summer is the only season where I actually have time to cook.

I like wraps just as well as sandwiches, so thank you for the idea. I haven't tried the BBQ baked tofu yet, but I think I've seen it in the store. Do you still cook the tofu or is it ready straight from the package?

It is ready straight from the package. Sometimes I eat it cold, sometimes I heat it up a little bit first, but it tastes good either way.

I like a combination of tomatoes, cucumbers, fresh basil, lettuce,radishes,fresh mushrooms asparagus when I have it in the house. I also use fresh spinach alot.

I just found a great recipe for tofu salad sandwiches. You take some firm tofu, drain it well and smash it up. I add some minced garlic, a little salt, a good amount of veganaise, some cilantro, and sometimes a small amount of chopped onion. I spread it on some toast with a slice of lettuce and/or tomato, and you can also add whatever you'd like, such as avocado. You can add some veggie cheese if you like also. I also like veggie burgers. Another thing I love that might sound silly is just a simple veggie sandwich. I put lettuce, tomato, raw onion, spinach leaves, and olives on some bread or a sub roll and it's so delicious!

My son and I discovered an awesome sandwich at Penn Station restaurants - artichoke and mushrooms. It really is to die for, and I would recommend it to anyone - meat eaters, vegetarians or vegans. Yummy. (For those who eat cheese, they'll put on provolone and parmesan.) We now make them at home, for far less than they cost at the restaurant.

I'm not vegan, but we have a favorite sandwich that our vegan friends LOVE! We marinate eggplant and grill it. It goes on a sandwich with sliced tomatoes, mushrooms sauteed in garlic and herbs, and sauteed red onions. Sooo tasty! We, since we're not vegan, usually add some homemade mozzarella cheese to it.
