I use alot of these two spices. In fact, I just bought more this past weekend. I cook with them a couple of times a week. I love food with a Chinese flavor. Although, I doubt that all Chinese food uses these all of the time. I know that I use them all of the time for the Chinese dishes that I cook.

Not every chinese like ginger and garlic,just like me.I don't like the smell of garlic despite it is good for health.I must seek out all the garlics in the food when I'm in time to eat.But I like a number of other spices such as pepper and coriander,especially in mutton soup.

I'm afraid I don't think it that way.There are many Chinese dishes which don't even need ginger or garlic.
