Rice pudding

can anyone out there tell me, how you make your rice pudding my dad just loves t he way i make mine but i would love to know how to make a few diff types of rice creams and rice puddings.. my dad is getting old and only likes soft food so as his loves his pudding i thought i would find out any great rice recipes for sweets or puddings.. HUGS

This is a secret recipe. I don't give it to anyone. Sorry I caught this question three days late, but I'll leave it here anyhow. You need 3 cups of milk, 1/2 cup of rice (uncooked) 1/2 cup of sugar 1 tsp of vanilla and one egg white (not mandatory) Boil the milk first. It can be tricky, you don't want it to scorch. Mix the sugar and rice together and add to the boiling milk. Stir in the vanilla. Sounds easy and it is, as long as you pay attention to the milk. You don't want it to boil over and you don't want it to sit there. You want a nice even simmer. Stir it around every once in awhile so it won't stick. It takes about 45 minutes to get the right consistency. You'll find what works for you. If you want to fluff it up, after you turn it into a serving bowl, fold in one slightly stiff beaten egg white. You're done.

Personally, rice pudding is the best way to eat rice! My rice pudding consists of getting a batch of rice nice and ready, add freshly whipped cream and a beaten egg, and stir it all up over low heat. Then, I add sugar/splenda/stevia/sweetener of choice, a bit of salt, and whatever flavorings (usually vanilla and almond -- or brandy!), and whatever fruits my guy wants in it. I cook it until everything is nice and creamy, and I then pour it into bowls to be refrigerated or served. Yum! It's so excellent.

Forgot to add that the amount of sugar depends on how you're serving it. If you're going to serve it with a fruit syrup, you don't add as much sugar. If you're going to serve it without the fruit syrup, add as much sugar as you like!

My Dad loves his creamed rice as well and I must admit, I quite like it too. It's very easy to eat. I don't have a specific recipe of my own, I just use the one in an old everyday cookery book I have. I'd be interested in a few different ideas as well.
