The cooking is very simple and quick, usually. The preparation is what takes the time and the particular blends of herbs and spices, together with the quick cooking, are what gives it its unique taste. There are many good cookery books on the market. My favourite has always been Ken Hom's books. He explains the recipes in a no-nonsense and simple way and if you follow his instructions you can be sure of acceptable results (better than your average Chinese take-away/take-out). You will also learn about the methods and ingredients that make food prepared the Chinese way delectable.

Quite simply nobody cooks chinese food like the chinese themselves, but, why not make your own version of some classics? Fried Rice is simple, yet most of us over cook our rice or do not leave it overnight in the fridge before use. Sweet n' Sour Pork is a rather popular chinese dish, many variations, so, try one of your own.....Peking Duck? well, a classic that needs to be bought already cooked i believe. Any cuisine you fancy can be challenging, yet a learning experience....if you try and fail.....ring for takeout!!
