My husband hates it when I waste food so we eat leftovers a lot. I have a hard time cooking for 2. lol One thing I sometimes do is make a casserole one day and then something else the next that would taste good with that casserole. Then mix them for the next day. Another thing I do is, fry breaded boneless chicken (make extra for the leftovers), make mashed potatoes (again make extra), and some kind of veg (corn, peas or whatever) Then the next day, layer them - veg, potatoes, breaded chicken (warm them first) in a casserole dish. Then I pour hot chicken gravy over all of it. That's any easy way to use leftovers and it's really good.

Leftovers in my kitchen are improvised with onion and garlic saute, or just plain fry with egg. Or patties. I don't like leftovers because it makes me think of lots of hungry people in some place of the world. That's why i always "recycle" leftovers.

we do try not to have many left overs everytime we eat so we save on money by not cooking extra.

I like to make extra spaghetti to make a frittatta the following day. Also, whenever I cook potato, pumpkin and peas, I make extra for vegetable patties or bubble n squeak the same week. Leftover sausages are very nice reheated in the microwave, or added to a vegetable curry...yummo!
