how to bake chewy cookies?

hey guys do you have any special mixture or ingredients to have chewy cookies when baking? i really need your help on this one. my cookies aren't that chewy. thanks in advance

kenchiprincess _ hi. I have only this to add to the discussion. I use the same methods already mentioned. I bake my cookies on the top shelf of the oven. If you bake with real butter, don't cream the butter and sugar for more than two minutes. That should do it! travel lightly, anawar

Yes, taking them out of the oven a little sooner does make for chewier cookies. Also, I put them away in a sealed container while they are still slightly warm. The heat keeps them soft.

I use butter flavored Crisco in my cookies instead of butter or margarine. I also take them out of the oven while they are set completely, but not too brown. About 1-2 minutes early. Don't leave them on the counter uncovered or they will get hard.

I usually just take them out of the oven a minute early, and that helps to make them chewy.

I always substitute brown sugar for at least half of the granulated sugar. And be sure they're not overdone. As some of the others have said, take them out a minute early.

Hi Kenchi, I agree about pulling the cookies from the oven before they actually look done. However, I also have found any cookie with oatmeal in the recipe commes out really chewie and never hard. If you don't like oatmeal-raisin cookies try: * Oatmeal spice with pecans Or with gumdrops - my favorite * Applesauce Oatmeal * Chocolate Chip Oatmeal * Oatmeal with Butterscotch Chips * Oatmeal Peanut Butter * Oatmeal with White Chocolate Chips and dried cranberries - a great Christmas cookie and another of my favorites. And if you need a cookie, you just need a cookie so it's good that oatmeal has all that good fiber in it. Have fun with your baking.
