In this moment CF is above SLI because AMD optimized the video drivers better than NVIDIA, but you can't convince a nvidia fan that CF is better than SLI.
SLI is for pentium rigs and Crossfire is for AMDs. Intel hold the leads in performance and stability so at this time SLI would be a good choice. One more thing the price different between the two processor is not that great.
