i want to make muffins...

i want to make banana muffins. they call for 5 1/3 Tbsp of butter or margarine. i ran out of butter and margarine. Can i use oil instead of the butter or margarine? if i can do i use the same amount of oil as butter called for in the recipe?

When baking muffins, be it banana or otherwise and your you don't have enough margarine or butter, I would not recommend using oil. This will likely make your muffin batter much too runny. I would try using yogurt for the recipe. Just use whatever amount is remaining that is called for the butter.

PS: Or use the equal amount of applesauce instead of butter. Good Luck!

Nice! You're very welcome and Thank you. ow did they turn out? I have an awesome recipe for banana bread if you are interested. It is actually chocolate chip banana bread. Yee-Umm! Instead of walnuts, I use the chocolate chips. (I add about a 1/4 more than the recipe call for though ;D and I put them in a small bowl and add about 1/4 cup of the flour on them. Stir them up so they get coated then add them last into the banana bread mix and stir them in. The flour keeps the chocolate chips from sinking when it is cooking. I also grease my loaf pan with butter. Then instead of the old way we used to do it - dusting the pan with flour, I dust it with granulated sugar. Comes out purrfect. One in awhile awesome chocolate sugar fix and it is Good! Thanks again. pm me if you'd like the recipe.

if I were you I would make banana bread instead, then you don't need butter, and it's essentially the same thing, but different shape.
