I have 1 large chicken breast to cook for 3 people. Our groceries are getting a bit low and I have a very picky eater. Some other things I have to cook with, rice, pasta, cheese, celery and spices. any ideas?

No food no picky eater. You have soup right there. or you can cut the chicken into slices and cook and put over pasta with cheese and put the celery in for color. or out it over the rice. My great niece is a picky eater at home at her granma's but not at Auntie's or at greatgrandmom's house. As what we put on the table is what you eat. If you have a can of peas you can put that on the ouside of dish to make it look really good. YOur friend onlydia.

If you have some type of condensed soup you could cut up the chicken, mix with soup and spices.

Or you could cut up the chicken make a "gravy" and serve over the pasta or rice.

I forgot to mention that I have cream of chicken soup. I will probably make a casserole but I was hoping to avoid this.

Now I don't know what you did with it, but I would cube it. I would cook the pasta and use the cheese to make a cheese sauce. My kids love when I do this. Marsha

If you cut the chicken up into bite size pieces it will seem to go a lot farther. You can make a cheesy chicken casserole dish. Mix the rice with the proper amount of water and a can or 2 of cheese soup, top with chicken and sprinkle with cheddar. Last night I made chicken bundles. Prepare stuffing as you normally would, mix into it a can or 2 of cream of chicken soup, and bite size bits of chicken. Then place a spoonful of the mixture in the center of an unroll cresent, wrap the cresent around it and bake for 12-13 minutes. This is a family favorite.

That does sound great but no cheese soup! When I get to the grocery store, I may try this. Thank you!
