Behind most gambling sites are people working behind the scenes making sure that the majority of people will lose or they won't make money...
Like gambling do people work behind the scenes to make sure certain information is blocked or lost?
Who controls the servers?

I'm not really sure about that one, if they do that's really unfair and also cheating people like that dosen't sound very legal? If it's true thats really sad and it sucks

If everything is recorded then in a sense they are watching 24/7, sure...

It is often the people behind the scenes who makes things possible. In the example given, I would think it is the floor manager who monitors the performance of each table and makes the necessary move to swap dealers or consult higher authorities on actions to take. Behind the scene, there could be other managers observing the floor via close-circuit TVs. It is an organisation as a whole and I would think organisational management applies.
