I have a soup simmering on the stove today, actually :) I don't have a specific "recipe" because I make all my soups from scratch but here's what I did for this one. I had many bags of veggies that I had frozen when they were in season this summer so I wanted to use them. You, of course, can just buy fresh ;) I first sauteed some onion and garlic in a bit of canola oil to soften. Then I added some sliced carrots and a bit of water to have the carrots start cooking. During that time, I defrosted and added cauliflower, broccoli and green beans to the pot, along with some chicken broth, a can of diced tomatoes and seasonings. I let this cook on medium heat until all the vegetables were well cooked. Then, using a hand-held mixer (or "whizzer" as some people call them LOL), I pureed everything right in the pot (no mess of having to clean up a food processor if you do it this way). What results is a very thick "potage" or basically like a creamed soup without the addition of any cream or other fats. It's very, very healthy and filling. I will serve this with a nice bread for dinner. Here's another one that uses zucchini (which, when you puree, also gives a soup with nice body to it, so very satisfying): http://kitchenparade.com/2003/01/low-fat-vegetable-soup.php Hope these help! Congratulations on your new baby! :)
