I need ideas on what foods/dinners are best for freezing ahead of time.....

I have a friend that has cancer. She is scheduled to have her tumor removed in March. Her daughter has emailed all of her mother's closest friends asking us if we could prepare some meals that could be frozen so they can just pop it in the oven or microwave for easy re-heating during her mother's recovery time. It will help the family out tremendously. I am more than happy to do this, but I have never frozen meals ahead of time. So, I really do not know what freezes well. Can I get some suggestions? Is there anything special I need to know about the freezing process (ie, what kind of container is best, etc.). I hope some experienced cooks can help me out with this. Thanks.

You could make meatloaf, you could cook it and put it in a throw away metal pan, and cover it with foil. You could pick up a family size Stouffer Lasagna and they could cook it on their own. Stuffed Peppers would be good, cook until the meat is done, which you make just like meatloaf, only add just a little minute rice. Cover with Italian tomato sauce or spaghetti sauce. Sloppy Jo's and just put the meat in a Freezer bag.

Hmm, since I am not too sure about what is freezable, I will tell you what my family has in the freezer for easy edibility haha. In there we have stuffed bell peppers, with hamburger meet and spices, as well as frozen air sealed pies, vegetables, etc. We also have frozen soup and broths that we wanted to keep. I know a lot of people who also freeze lasagna meals. Many also freeze chicken pies, etc. That is about all that I can think of that is easily frozen, I know I am not too much help haha, but hey I tried hehe. Well, you have been helpful! You've given me some good ideas. In fact, I had thought about lasagne, because that is one of my specialties. I've just never frozen it before. Thanks for the ideas.

that is a very nice thind for you to do & i know it will come in handy. there are bags you can buy for the freezer from zip lock or one of those co. if you have corning ware i freeze casseroles in it alot. you just have to make sure whatever u use is airtight. as for things to freeze most any casserole freezes well. lasagm\na, spaghetti sause, homemade chili & soup freezes well. chicken & dressing freezes well. any cake, pecan pte, fruit pies & sweet breads such as banana or zuchini do well.i love poppy seed chicken & it freezes well to. maybe some of these suggestions will help.good luck to the lady who is sick.
