Is it possible to make a meal that is healthy and affordable?

I have noticed that convenient and fast foods tend to be very poor nutritionally. Fresh vegetables and fruits and other healthy foods tend to cost more than their quick fix counterparts? Do you believe that you can make a meal that is healthy without spending too much money at the grocery store? What is your favorite healthy AND inexpensive meal to make?

I love my xpress 101 because i can always make a healthy meal without having to add any oil or other fattening products. Other similar products work well too and they dont cost alot. Only problem is that xpress 101 only makes food for 1 or 2 people at once. another good thing is that you dont have to spend extra on groceries, you can just use what you have in your fridge or even leftovers!

I have never heard of an Xpress 101. Is this some type of fast cooker or steamer? I will look it up and see what it is and what it does. Thanks for the contribution!

Yes I make chicken pot pies myself so that has your veggies and meat in it using pie crusts , vegall,-drained and cream of chicken soup for the filling along with leftover chicken or you can use a can of cooked chicken. Also I like to make lasagne and it has your meat-hamburger, cheese for dairy , tomato sauce for veggie, onion if you like and noodles for bread. You can always add a cup of various yogurt for your fruit. I know what you mean though, the junk food is the cheapest to buy and with a bad economy I fear we are just going to have more health issues and obesity due to what people can afford.

Thanks! It is good to know that there are still folks out there who are willing and able to improvise and make miracles in the kitchen. My grandmother grew up in the Depression and she was a master at taking a few ingredients and turning it into something wonderful. I appreciate your contribution.

during the winter, i like to make a lot of soups like beef and barley (the recipe which i got off the internet). it doesnt cost that much and you can put as many veggies in it as you want. I go to the butchers for the soup bone and can get 2 for just over a dollar.
