Gluten Free Eating

Over a year ago I discovered that I was allergic to gluten. Since then I've discovered I am allergic to many other foods as well, cheese, chicken, beef, it's actually easier to tell what I can eat than what I cannot eat, LOL I have learned to create some very interesting dishes over the past year, but still looking for those fast treats that are yummy. Those of you who are allergic to gluten, you understand why that is not an easy task. So, if you are allergic to gluten, how bout sharing a recipe for a yummy sweat treat that is either fast and easy, or something that can be cooked, and frozen for a fast treat later.

Here's one for you:Silky Flavored Chocolate Cake (or is it Brownies??) 8 oz Ghiradelli bittersweet chocolate squares [could use semiswseet chocolate] 1/2 c butter 3/4 c sugar 3 eggs, beaten 1 tsp vanilla This is important or it will fall apart when removing from the pan--- Prepare 8 inch round pan - grease & powder pan with cocoa powder instead of flour! Another option so the cake doesn't stick is to also line the bottom of the pan with wax paper. Using a double boiler [or one pan on top of another]- get water in bottom slightly simmering- you melt chocolate & butter. Remove from heat. Stir in sugar, eggs and vanilla. Pour into pan. Bake at 300 degrees for 40 (maybe 45) minutes. Let cool in pan for 10 minutes or so if you plan on removing from the pan. Serve as is or you can sprinkle with powdered sugar and/or top with sliced, fresh berries. Maybe whipped topping (if you can have that) & berries? Try a piece warmed,too I hope this helps. Hopefully all of the ingredients are good for you. Oh, you could freeze this.

Mmmmm, that sounds really yummy, but how does it become cake without flour of any kind? I have seen lots of recipes for cake, but absolutely no flour involved. How does that work? I have to make this, maybe I'll understand it then : )

Trust me, you can make cake without flour. Lucky for you! Keep in mind a cake like this will not have the exact texture of a traditional cake since there is no flour. It may make you think more of a texture of a brownie. This may even make you think of a dessert you would expect to get in some fancy restaurant, especially if you top it with the things I suggested. I believe once you find a recipe you like & have a no flour cake turn out just right, you will not feel like you are missing out on the typical cakes. You might even prefer a cake like this!
