My awesome meatloaf

Hi everyone. I think I've finally found a concoction that works for me as far as meatloaf goes. I used to make it with breadcrumbs, one egg and maybe some bbq sauce...9 times out of 10 it came out very dry and no one wanted to eat it...myself included. Since I have become a stay at home mom, I've gotten creative in the kitchen and this is what I came up with for meatloaf. 1 pound of ground beef, 1 cup of shredded tofu (firm), 1 cup of shredded vegetables (specifically carrots, onions, green and red peppers), 1 tbsp of All Purpose seasoning. Mix it all together and bake at 350 for roughly one hour. All I can say is WOW...you don't need the egg because the tofu will bind the meat together and absorb any other flavours of your ingredients, the vegetables replace the bread crumbs and the seasoning replaces the bbq sauce. Even my very picky 6 year old came back for more. It is probably the 1st time ever that the meatloaf totally disappeared with everyone asking for more. I'm definitely becoming more confident in the kitchen. If anyone has any variations on this dish or would like to suggest new ones, I am totally willing to have my family as the guinea pigs ;)

I have to try your version of meatloaf it sounds good! - I have another version 1 lb of ground meat 1 egg breadcrumbs a jar of salsa - mild, medium or hot depending on your taste mix all together top with one small can of tomatoe sauce or salsa bake at 350 for 45 minutes Its juicy and delicious!

Hi lelin I your version and it turned out great. The only thing I left out was the egg (basically I got distracted and forgot) but the salsa gave it a nice kick and is an excellent alternative to chopping up all those veggies. Thanks for this...it's going in my recipe book ;)

wow.. congratulations on that. i havent yet tried making meatloaf of my own but i have copied your recipe here and the how to, its simple. i may try this on saturday when my kids comes back from their vacation. they like meatloafs, i but them those in cans and sometimes my mom when she takes a visit here brings some. thanks for sharing.

My fiance's dad makes the meatloaf around here and it tastes just like what my grandmother makes. I'm thinking they use the same recipe! It's a quaker oats recipe, but I don't know all the ingredients. You might could find it on the quaker oats site! I think this is the recipe, but he adds greenpeppers and onions! I really like that you are 'sneaking' veggies into the meat loaf! Stuff like that is great with kids. They never seem to want to eat vegetables so putting it in the main dish is a great idea. I had never thought about putting tofu in with the meat loaf. I might have to try it. Although, I am nervous. I have cooked with tofu twice. Once I just breaded it and fried it. It turned out good. The other time I tried to cook it in something and it turned to mush. It was awful! Thanks for sharing your tips!
