Lunch for dinner?

My hubby is working late. I don't feel like eating, and I have fed the baby. So I made my daughter a peanut butter sandwich, grapes, pretzels, tomatoes, and a glass of milk. This is the sort of thing I would make for lunch. But threw it together for dinner. Keeps the house cooler too. Ever just decided quick and easy would be ok for dinner?

Well, sometimes I'm at work and Quick and Easy is the only option I get. For lunch today, it was a baloney sandwich. Sigh.

We do that alot. We also have breakfast for supper at times too. With the hot weather it is good to cook as least as we can.

Nothing wrong with that. You gave her a nutritious meal tha was easy and quick to prepare. Great idea. YOu could have given her cereal and fruit too as an alternative. We do not need heavy meals in this terrible heat that we are experiencing where I live. anything that is easy to prepare is fine by me but I do not do a ot of cooking as my son usually cooks dinner for us.

Girl there have been a couple times over the past month where I gave the kids CEREAL for dinner just because it was way too hot in the apartment to cook lol. But get this, you gave your daughter lunch for dinner; today I gave my kids dinner for lunch! I didn't know what to fix them until I looked in the refrigerator, and saw the porkchop dinner leftovers from the other night. I don't have a microwave, but I did get my AC this past weekend so it was very easy to pop everything in the stove and let it warm up as I finished cleaning house!

Really love that idea!
I've read that eating a dinner type meal
for lunch earlier in the day is actually
healthier, especially for adults.
Guess it's cause the meal gets digested
and used for energy.
Sometimes we get sucked into the conventional
wisdom of what lunch should look like according
to what they do on television shows and such and
then follow that.
A big lunch is always a good thing, especially for a kid.
Will try this idea with my own daughter.
She's a super picky eater, especially at supper but
has no problem with anything I serve during the lunch meal.
Guess it's cause of all the energy she has expended at
playtime.
Night time is more reserved and laid back.
Time for a sandwich or something simple like that.

We've been doing a lot of that lately to save money. Tonight I nuked some chicken patties and a can of corn, and gave them all some potato chips. I had a bologna sandwich because oddly enough I was having a craving for it.
