Yucky Spices or Flavors

I use spices of all sorts when cooking, and sometimes I use some I don't particularly care for just because it is essential to the recipe. I use the following very sparingly though, as the overpowering flavor, to me, is gross: caraway seed, thyme, and cilantro.

Hi princess, it does not matter to me if the recipe calls for a particular ingredient, if I don't like it it does not go in my cooking. Personally I loathe oregano which goes in every Greek dish but I put it in none, and can find an easy substitute. I don't think that there is anything that is necessary to go in a dish if you don't like it, recipes are made for breaking. I love thymne by the way, it grows wild everywhere outside.

I use oregano in most Italian style dishes-you have to put in it with tomato sauces to make spaghetti. But you know, it is definitely not a flavor that I like strongly-it can be way too pungent and ruin a sauce if too much has been added. I had some potatoes that had too much thyme on it just for lunch today-yuck. It was a frozen dinner, and one that I didn't really care for.

Hi princess, but that's my point, you don't have to put oregano in the sauce to make spaghetti, basil is a much more pleasant substitute. As most food served in the tavernas here comes with oregano on top I always order it without and they are used to it, I don't want it all over my meat or salad. When we share a salad or cheese and I ask for it without oregano some friends can look horrified but it is easily rectified by asking for a shaker of oregano for them to use once the food is safely on their plate. Just swap the recipes around and cook what you like.

Actually, when I make homeamde spaghettie sauce, I use both basil and oregano, about equal parts of it actually.

I also use a lot of different spices for cooking, i think that cilantro you have to acquire a taste for it. I do not care for it either, If i come across a recipe that has it (cilantro) in it. I just leave it out. or substitute it with something else.

Well, cilantro is an herb that many hispanic recipes call for and since I am not too ethnic foods savvy, I end up suing it, just smaller amounts.

Holla! I cook a lot and use most spices! If I need some I don't care for I'll use it lightly! The ones I won't use are curry,coriander seed and like you caraway seed. I never cared for cilantro but since I've been in Mexico so long I've gotten used to it, they use it a lot down here. Coriander is the seed that grows Cilantro! Just a little info for ya! tdemex
