Mung Beans

Somehow, through an overzealous buying frenzy some time ago I have several bags of mung beans. I've found some good recipes, and some not so good ones. I was wondering what you may do with them, besides sprout them and use the sprouts. We eat a mostly vegetarian diet, and lately I'm anything but inspired to be creative..so any ideas will be much appreciated!
