rice

1 cup uncooked rice 2 cloves garlic, minced 2 cups cold water ½ onion 1 tablespoon chicken bouillon ¼ cup tomato sauce Roma tomato, chopped into 8 pieces 1 teaspoon cumin powder (or seeds crushed into powder) 1 chili pepper, sliced lengthwise 1 tablespoon olive oil ... pour the oil in a pan then brown the rice when the rice is brown pour in the rest of the ingredients , if you want to can throw in jalapeno peppers, black beans, whatever you like to jazz it up a bit. or make it without the black beans and serve them separate on the plate and add a spoon of sour cream on top.

Max 1950, has a good recipe there! That is really close to how my mother used to make it! You don't have to put the chili pepper in there unless you want to! Also, in the restaurants they usually make it a little too dry for me! At home I add more water, as needed, to keep it from getting dry! Just add a little at a time ! I like mine nice and moist!

You can make it a lot of ways. My favorite is just taking plain cooked white rice and add salsa, and fry it. yum!

Basically it is just a matter of adding in a little tomato paste and some finely chopped green peppers. Here is my recipe, I posted it on another site. Mexican rice? i guess I never ate it before.. is it good? I didn't know mexicans ate rice.. i can just picture a mexican eating tacos and drinking tequilla lol sorry for the idealized vision. I hope some user can help you though.
