If we don't eat them in a few days then I freeze them & we eat them another time. My whole household absolutely loves turkey sandwiches.

I have quit a few left overs to deal with. The day of thanksgiving I took all the bones and put them in my crockpot and covered them with water and cooked them all night. I strain the bones and toss any veggies in the broth. When it's cool enough to handle I finish picking the bones. I got about 2 or 3 more cups of meat doing thing and at least 2 quarts of broth for noodle or gravy.The next day I cut up the other left over turkey for some TV dinner, pot pies and Hot pockets. These I put in the freezer to work on later. I don't like to keep turkey in the fridge more than 4 days but it is usually gone before then as the kids will pick it apart.

We did not do a big Turkey dinner this year, so there really were no leftovers. Normally though I will freeze most of the leftover turkey so it will keep longer. I might do turkey leftovers the day after Thanksgiving, but I get worn out on turkey after that.
