What did you have for dinner?

Tonight I made venison loin medalions in beef gravy with steamed peas and carrots and some good wheat rolls I bought at the store. I crusted the venison with a seasoning mix that included some course ground pepper, sea salt, carraway and seared them on both sides. Then I took them out of the pan and sweated onions and garlic in the drippings. I add about a tablespoon of oil when I seared them because venison is really extra lean (which makes it very low calorie compared to even white meat chicken). Once the onions and garlic were translucent I deglazed with some beef stock and a pat of butter, then I stirred in some brown gravy mix. Once that started to reduce I added the venison back to the pan and let it simmer for about ten minutes. It was good. I have some gravy left over for mashed potatos. What did you have for dinner?

It's the day after Christmas; what else would I have but leftovers? :) Turkey, beef, potatoes, lots of raw vegetables, pumpkin pie, jello, cake...

I'm sure everyone is still over fed from christmas and thanksgiving. I cook dinner almost every day, so christmas dinner wasn't unlike every other meal. Do you do any interesting things with your left overs?

That depends on what you call interesting. I love turkey sandwiches, and when that runs out, I boil the carcass to get the rest of the meat, then I make turkey soup with rice, celery and carrots. There's always plenty of meat for that and turkey and homemade egg noodles. The rest depends on how much is left and how they were originally prepared. Mashed potatoes wind up as potato pancakes or mashed potato salad, raw vegetables become cooked vegetables, and so on.

Well our dinner plans got ruined tonight because of a winter snow storm, my family was going to come over and I was going to make manicotti. All of our meat was frozen so I ended up just making up some pizza puffs and french fries. Not very healthy I know, but we were all starving and did not want to wait to defrost anything.
