Quesidillas

My kids like their quesadillas with just Chihuahua cheese in them. I like mine with various things in them. There is a Mexican place up the road from me that makes them with ground beef and potatoes that is really good. I usually get one of those when I go there. There is another place I like to go to that has mushroom quesadillas which are just sliced mushrooms and Chihuahua cheese. They are very good.

I love quesadillas!!! Since Im such a huge cheese lover they are just perfect for me. Most of the time I just feel like there's something missing from them, so when I make them at home, I usually put onions and black olived on them. I really like to put chives on them but I don't keep them on hand all the time like I do sweet onions. I just chop up the onions and olives and pop them in after the cheese melts so they don't get mushy. I like to dip them in hot salsa too, it really adds to the flavor and makes them a little less rich.
