I have boiled rice that has been in the fridge for about 3 days to make fried rice. Is it still o.k to use or will I start again?

Cooked rice is one of the foods that can be very dangerous if not stored and used correctly. I used to teach catering and this is one fact that I used to force onto my students. Rice is easily contaminated by spores of Bacillus cereus, which can cause food poisoning. These spores are able to survive normal cooking so if the rice is not cooled quickly and put in the fridge, the spores can grow and toxins will grow, one of which is very resistant to heat and so even thorough re-heating of the rice won't get rid of it. Here are my tips and suggestions for storing cooked rice: 1.Rice that you don't use straight away should be cooled to room temperature as quickly as you can.(Certainly no longer than one and a half hours, preferably a lot quicker.) 2.Once the rice is cooled to room temperature, cover it rice and store in the fridge.

Great advice on cooling the rice. I suppose we do not realise sometimes about spores and toxins, that they can be dangerous. Thanks for the advice.

Should be ok, but make sure you smell it and check it before cooking. The smell is most indicative.

If you or your daughter has a weak stomach then it may be advisable to throw away the rice. Better err on the side of caution than risking losing health.

There should not be a problem with it at all. Rice can last up to a week at a time in the fridge. Just smell it first, but it should be good to use for your fried rice. Enjoy and have a great day.

I would throw it away after 3 days. Rice can be a difficult product to store and you can get food poisoning from it quite easily. I would only store it for one day in the fridge before using it.

smell the rice first before reheating it again. If it smell weird, then probably the rice is already spoiled.

Hi suehan1, it's much healthier to take fresh cooked rice as well as other dishes. Therefore we always try to prepare the required amount of rice for the two daily meals. Oh yeah, rice is our staple food and we cook rice everyday. my husband and his elder like taking supper before going to bed. In case there is still some rice left in the cooker either one of them would take it together with chutney and soy sauce with fresh cut chili added. I think it's safe to fry the rice from the fridge if it looks fresh with its usual fragrant smell. As I know some of the people here like to prepare fried rice from rice purposely cooked a day before the frying. Of course it's not safe anymore to get it fried if you have got the disgusting smell from it. Take care and happy posting

I think one or 2 days in the fridge would be o.k. maybe left after that it would be no good.I do think for fried rice it is better to use day old rice, so every one says.
