Hot to make fluffy pancake

My in-laws gave my son a piece of hotcake the other day. I was so surprise about the fluffiness. My son ate almost 75% of it and was done so I ate his left overs and when I tasted it, it feels good in my mouth, like it's so soft and you don't need to chew it. I cook hotcakes but not like that, it's just flat and lifeless... (ohh.. you get my point! LOL!) So I was wondering how they are making it. I know, you might thought that I should ask my in laws myself but... I'm shy. They might think that I don't know how to cook a simple pancake. So, how do you cook your hotcake? Do you know how to cook the fluffy one too? please share. thanks!

ok here is the recipe that I use 1 egg 1 cup flour 3/4 cup milk 2 tbsp of vegetable oil 1 tbsp sugar 3 tsp baking powder I usually make this in a big glass measuring cup so I can just pour it on to the hot griddle. Or hot pan. Beat egg by hand until fluffy beat in the rest until smooth. Do not over mix it. There will still be lumps. For thinner less fluffy pancakes add extra 1/4 cup milk. Grease a heated griddle if it is not non stick (to test to see if it is hot enough drop some water off your fingers it should skitter then bubble around it is good. Pour the amount so you have a good sized pancake. you will know it is ready to turn when it is puffed and dry around the edges also as they cook you will see bubbles form when the bubbles pop and do not fill back in it is ready to flip them. Cook other side until golden brown. Sometimes I will add a handful of mini chocolate chips to the batter yummy. One thing to know that if your flour and baking powder are old they will not be as fluffy so try and make sure that those are new and not expired. Good luck the more you make them the better they will be.

I copied your recipe! ^.^ Thanks I'll try this one out. Although, what I'm using is the ready ready mix one, and I'm sure my in-laws used that too.

Mine is simple. Just 1 cup of flour, 1/4 teaspoon of salt, two tablespoon of sugar and to teaspoon of baking powder for the dry ingredients. sift the dry ingredients twice, then in a separate container or bowl beat an egg, add two tablespoon of oil and a cup of milk, mix it well then add your dry ingredients in the mix. Mix it until the batter is in a consistency you like. Then make pancakes with it. Fluffy? I think mine is fluffy. Maybe you don't add baking powder so your pancakes don't rise.

Oh, I'm using the ready to cook just add one egg mix. I'm sure they used the same brand that I did. If I'm using one, should I add baking powder too so I'll rise?

I make mine from scratch now but I did used to just buy a ready to use batter mix. Well if you follow the instructions right on the box then maybe it should be fluffy too because it is already premade with ingredients necessary. Well, you can add baking powder to make it rise or you can just switch to a different brand if you wish. Are you sure you got the instructions right?

Absolutely! I follow instructions by heart! egg, oil, batter, water... everything. Do you think it's how I mix them? I don't use whisk just fork... Should the egg be whisk until it bubbly? but I've done that too! I've been trying everyday.. still the same! arg!

ok i just want to add more since i saw that some mylot members already has given you the recipe and ingredients. Add more eggs,it will gives the fluffy thing. And it will taste even better.

It will also make it taste more like egg, sometimes becomes an omelet.

if the custom in my country when cooking fried beans must be boiled first before we fry, then flavored to taste,and the most important time to wash beans should be cleaned first so that germs do not stick
