What do you think about my potato salad?

This is the second salad I made recently after the avocado salad, basically I just put boiled potatoes + cherry tomatoes + cucumber into a salad bowl and toss them in mayonnaise + lemon juice dressing and topped with Parmesan cheese. What do you like to put on/in your potato salad? and what do you think about my potato salad?

I love potato salad and this one sounds really yummy. I would just substitute the maynnaise with full fat yoghurt, it tastes better and isnt as heavy as mayo is.

Never tried potatoes salad with yoghurt, but I like fruits with yoghurt. Thanks for your reply Ritter!

hi karlim you mix the natural yoghurt with a little salt and pepper and a good dose of mustard thats much better than any mayo could be....... my mom did so and so do I.

How do you like your second salad compared to your first? Personally, I liked your first one better as I'm not into dairy products, too much potato nor tomato, but if you like it, then that's fine. I find homemade mayonnaise is much better than the store-bought varieties out there. There are some good free recipes online for that sort of thing. Your salad recipes look original, so I'm interested to try it myself with all the necessary substitutes just to see how it tastes! I think this one would go very well with coconut oil. I like using only certified organic produce as it tastes much better & is better for you, for the country & the world.

By the way, I saw an organic macadamia nut oil at the grocery stall and I was tempted to get one for my salad dressing, have you tried macadamia nut oil for your salad before? How did you like it?

I have heard of it & seen it on the shelves of supermarkets. It is relatively expensive, but also very good for you, better than most other oils. I haven't seen any certified organic ones around & haven't tried it at all.

Hi Karlim, I also put tomatoes and cukes in my potato salad. I've never tried the parmesan cheese. I add celery and sometimes a couple of chopped up boiled eggs. When I add the mayo, I always add some mustard to make it tart which I would imagine does the same thing that the lemon juice does.

Your potato salad sounds good, yummm. But how about adding it some minced cooked bacon and pineapple cubes. Maybe you could it, anyway, you can taste it to experiment. Have fun cooking!

Bacon adds extra fat on top of the mayonnaise dressing, not sure it's still healthy or not. Thanks for your reply, white!

I have tasted some other kinds of potato salad don't worry your kind of salad is decent compare to the ones i have tried. I have tried a kind of potato salad with eggplant and toasted bits of bread tossed in vinegar, salt and pepper. I know its weird but I like it.
