What makes the best breakfast burritos?

I am bidding a job for breakfast burritos and am wondering what in your opinion makes the best. The job calls for "authentic" burritos. Would you use other meats or stick with chorizo? would you add beans? cheese? how would your authentic breakfast burritos be?

My authentic breakfast burrito has to have egg, NM green chili, potato and bacon. Without the green chili, it's blah. And to get the green chili, you'd have to make a trip south once a year and stock up on hundreds of pounds of hot, very hot, and okay, some medium-hot green chili. You'd be glad you did...

I make a decent green chili, not sure if it would be cost effective to travel south for the chili.....

Well, first, it would only be the cost of chili and the gas to get here. The rest would be on me. Now, we could go to the fields and pick our own, and roast our own, and peal/package our own, but over the last few years, I've found it much easier to buy sacks of already-picked green chili and watch someone else roast it, while I watch. But I still package it (small freezer bags), freeze it and peel it when I need it (it doesn't burn your hands as bad in little bits). And in July, when my niece and nephew came from Dallas, we bought it already packaged (5-lb bags ($5-6)) and frozen. Now that looked so simple, I might try that one myself next year. Except you really need to break the 5 pounds in to more family-size units. In other words, make it a vacation, Laglen. I'll show you what we have to offer, along with some great restaurants. Oh, by the way, my favorite burrito during chili roasting time, is chili straight off the grill in a flour tortilla. Add Asadero cheese and garlic salt and you're in heaven, unless it was an extra extra hot chili, and then you need to add milk. And in a few minutes, you'll need a restroom. Have a great day!

I like them with lots of cheese....sausage....green peppers...onion.....yummy. Waht is chorizo? I am not familiar with that!

laglen, For me, I like my burritos with fried eggs, bacon and refried beans topped with melted cheese. For the health conscious, roast beef, ham or sausage may be substituted for the bacon. As for those who like it a little spicy, we can consider adding chilli sauce or have salsa on the side.

I am not a big refried bean person but I guess thats a biggy in breakfast burritos... and I like salsa or fresh pico inside!

I think if you like chorizo use it I don't really care fro it.This is what I woiuld do chop some onions, welll like diced and tomatoes, the hard green jalapenos, and mix this with all the eggs and add some potatoes. First fry them a little then add them to the scrambled mix. Add some beans on the side and a side of hot sauce.
