I have a slight sore throat this morning so drinking tons of hot tea and just made a fresh loaf of blueberry muffin bread. I have not been baking anything because of the diet I am on so I decided to treat myself today. Son will take the rest to work tonight to share. Do you make something special for breakfast on weekends?

We keep quail, so usually either on a Saturday or Sunday morning we will have scrambled quail eggs for breakfast. Tasty little eggs. It takes about 15 of them to make enough for two, but with 5-6 eggs laid daily, by the time the weekend comes around we have plenty. Hot water with lemon and cloves is great for a sore throat, give it a try :)

That is so awesome! I have never eaten a quail egg. i have seen them though. very small. I would imagine they are a richer type egg than a regular hens egg? My father used to go hunting when I was a girl. he would scare up a covy of quail and we would have fresh panfried quail. Its been years. Oh the good old days of fresh meat. Thanks for the memories!

I've only just spotted the BR now - thanks Marie! The Quail lay small eggs, some species smaller than others. We have Japanese Quail, which are quite large in comparison to the Chinese Painted Quail and the eggs are about 2-3 times the size of theirs also. A Quail egg contains more good nutrition than a chicken egg (despite the difference in size) and no bad cholesterol or anything of the sorts! Fresh meat... Nom.

sometimes we will have french toast or muffins. i have had a bowl of cereal but i am making muffins at the moment. my hubby takes them to work to eat them for breakfast. i wrap up packages of two muffins and pop them in the freezer so he can take two when he wants.

Thats awesome Cher. wish my hubby could eat muffins I would do that too but he has diabetes so he always eats one of those Jimmy Dean crossiant sandwiches. If my throat is not sore tomorrow I am gonna make homemade mickey mouse waffles LOL I made my husband buy me a mickey mouse waffle iron. What kind of muffins are you making?

Well, from time to time since I do usually have Saturday mornings Free, we do occassionally have Eggs and Waffles, etc. but since my husband and I actually have started with a New weight loss shake thing, we are really trying to watch things, but do occassionally splurge ourselves. Hope your muffins turned out well.

adhyz82 you asked what french toast was. here is a basic version that my mother made for years and I carried the tradition on for my family. I use day old bread usually white. Beat two eggs in a bowl add about half a cup of milk a little salt and pepper and I add a hint of vanilla. dip your bread in the mixture and pan fry on both sides. You can then add syrup, cinnamon, butter or anything you like on your french toast. Some even add fruit like strawberries, or blueberries to get their added fruit serving. Now you made me want some so I am headed to the kitchen to make french toast LOL Since mom makes you breakfast, maybe you could make her this one morning and surprise her when you are not so busy with the game. Did you win by the way? have a wonderful day!

that sounds really nice. I have a hashbrown casserole that I make similar to that. I add some crumbled already cooked sausage and it really adds to the flavor.
