How long do you marinade chicken breast?

I want to make a great meal tonight, but I'm wondering how long should I let chicken marinade in Italian dressing to get the best flavor. Are there any other things I can use as a good marinade, and what would be a good side to serve with this dish?

I used to marinate for 6 hours or in some cases leave it overnight. If it's for dinner, marinate 6 hours before. It's not a science it's just what I've tested for myself, that way I guess it seeps in more into the meat. For the sides, I'd put on baked potatoes (casserole) nicely sliced (my favorite), lettuce and onions, some sliced bell peppers. The rest is up to you to be creative. With a handful of different choices. cheese, fresh string beans, pepperoni, chili flakes even.

Ah for the salad. Then the potatoes will do perfectly. Yummy. Now I'm hungry.

I was thinking about using the chicken in a salad, but vegetables always make me sick after eating them. I'm a meat and potatoes kind of guy.

You have to marinate it for at least an hour or two. You can have it with mashed potato and corn and carrots on the side.

Marinating any poultry or meat will just coat the outside and hardly goes into the items unless you inject the marinade into them.

Does leaving it in longer give it more flavor?

If you have potatoes and corn both, you're doubling up on the carbs. Corn is a carb.

You can marinate it anywhere from 30 minutes to 4 hrs. I like to use Italian Dressing too. But I make my own. Using balsamic vinegar with other spices gives a fantastic flavor. You can find marinade recipes at allrecipes.com or just do a search. I think a medley of roasted vegetables would be good with this. I just bought some brussel sprouts and am thinking about roasting them (cut in half) along with some chunked-up carrots, parsnips, onions, mushrooms and green bell pepper. I soak the veggies in an Italian Dressing too, then drain and roast for about 45 minutes.

I like the vegetable idea. How soft do they come out?

As soft or as crisp as you want them. Crisp tender, just cut down on the time in the oven. Leave longer to get them more done. You might want to leave the potatoes out if you want crisp tender. They tend to be better for the full 45 minutes.

Oops!!! I thought I'd originally included potatoes. Now see that I didn't. I think you'll be satisified with these other veggies at 40-45 minutes. At least, try 'em that way first so you'll know whether to take them out earlier next time.

I am not sure about the marinating time because I don't really know much about that but the sides for me would be some mashed potatoes or cut some potatoes like you were going to fry them and chop some onion and tomatoes and green jalapenos and what I do is fry all that together that is really good. Yummy but warning ho! he he he l.o.l. Anyway and I would have some corn on the cob too and some baked beans or pinto beans with pico de gallo yummy! Remember my husband is from Mexico so he said I was not a white girl becasue I eat too many jalapenos he he he I asked him then what am ? He said you are a white Mexican Now I am so hungry!!!

I'm not sure about Mexican spices with Italian marinade, but I'll keep that in mind for the next time I feel adventurous. LOL

I used to marinate chicken for 3 to 4 hours just to get the best flavor. You can served it with stream broccoli and corn, its so delicious and healthy.
